Food, waste, and food waste

Food is one of life's basics. Food has the power to transform a boring meeting into a pleasurable event, to make a dull party sparkle with enjoyment, to comfort one after a hard day's work.

Yet, food is increasingly treated as a mere commodity; worse, it is taken for granted.

I believe that food should not be taken for granted. My father was a chef and has, during my childhood, demonstrated what it means to source and prepare food. Although my role as a researcher is quite different from the child, watching the cooking; or the cook, enjoying to prepare meals; I realize that also here, it matters to devote time and energy to food.
